Every family and dish we hold

180 dishes in 29 families. One family is built all the way down; most are a corpus and a page.

Dishes are grouped by what they physically are, not by cuisine or by meal: a family shares a mechanism, so what we learn on one of its dishes transfers to the rest. That is the whole reason for building this way, and it is why the depth is deliberately uneven — we finish a family before starting another.
