Raw in the middle? How to tell when cookies are done

It is not a timing problem. It is a geometry problem, and the recipes we compared show exactly why.

We weighed the finished cookie in 82 of the 85 recipes we compared and read 7,124 reviews for what cooks said about the centre. A bigger cookie is supposed to still look wet in the middle when the edge is done: the two are decided by different physics, and the gap between them widens with size. We will not hand you a minute count. We will tell you what to look at instead.

The short answer

Stop looking at the clock. Look at the edge, then the middle.

Size decides the gap, not your oven. A bigger portion keeps its centre underdone while the edge sets, widening the gap between the two. That is our own mechanism note, not an opinion. Mass and surface-to-volume decide how far the edge dries out before the centre catches up, and a cookie built to weigh more starts every bake further behind on that clock. A heavier dough ball is not failing to cook; it is doing exactly what its own size predicts.

What actually sets the middle

  • Butter: butter changes whether the butter's own water reaches the flour, which decides chewy against cakey before the oven is involved. 259 bakes
  • Everything else being equal, a bigger cookie will read gooier at the centre than a smaller one baked from the same dough for the same time. That is geometry, not underbaking.

What we will not tell you

A minute count or a degree. We hold no structured oven temperatures or bake times, only whatever a recipe's own author happened to write in their method text, and those recipes disagree with each other on both. Anyone selling you one number for every cookie is guessing at the size of your dough ball. Why it happens

What "raw in the middle" actually is

Mass and surface-to-volume decide how far the edge dries before the centre sets. Edge and centre are separately controllable — which is why a cookie can be crisp outside and soft inside without contradiction.

The range is bigger than most people assume

We have a weighed cookie for 82 of the 85 recipes we compared. The smallest finished cookie in that set is 20 g; the heaviest is 166 g. Between those two, 16 recipes land under 35 g and 19 sit over 60 g, 10 of those over 70 g. A typical cookie in our corpus runs close to 46 g, and the middle half sit roughly between 36 g and 58 g.

Why that matters at the oven door

Cookie mass never turned into one of the two fitted levers below. Not because the effect is not real, it is basic physics, but because our reviews compare cooks who changed the egg or the butter and told us what happened, not cooks who ran a controlled test on how many grams of dough they scooped. The mechanism is universal even where we have no fitted vector to point at. It is also why edge and centre can be judged separately without contradiction: they are set by different physics, running on different timers, inside the same cookie.

Two things change how set the middle looks, before size even enters it

Recipes with more butter in the dough come out gooier in the middle. butter changes whether the butter's own water reaches the flour, which decides chewy against cakey before the oven is involved.

Recipes with more egg in the dough come out more set in the middle. More egg sets the crumb sooner, so the middle finishes firmer and holds its shape.

A big cookie is supposed to look underdone in the middle

Not a defect. The whole point of a bakery-style cookie is this exact contrast, deliberately exploited rather than avoided.

Picture two doughs from two different recipes, baked side by side at the same temperature for the same number of minutes. One makes a 20 g cookie, the other a 166 g one. The small cookie's edge and centre are close enough in mass that both finish together, the recipe was written around that. The large cookie's centre has roughly eight times as much dough insulating it from the oven, so at the moment its edge is exactly as set as the small cookie's, its middle is nowhere close. Pulling it then, because it "looks done at the edge," is correct. Baking it until the centre matches the small cookie's centre burns the edge first.

This is not a fringe case: 19 of the recipes we compared build a cookie over 60 g, 10 of those over 70 g, against 16 recipes under 35 g. If the last cookie you baked was on the heavier side of that split and you judged it against a memory of a smaller one, the comparison was never fair to begin with. If you want the big, deliberately-underdone-looking centre on purpose, that is what a bakery-style cookie is built to do. It leans into this same gap rather than fighting it.

These are quotes from recipes' own method text, not our recommendation. Read them together and you can see why we did not fit one.

Two of the recipes quoted above chill the dough for opposite stated reasons: one says it is for a thicker cookie that spreads less, another says it is for chew. Both are right for the recipe they belong to. That is exactly why a bake time or a chilling step lifted from any one recipe's method text is a fact about that recipe, not a rule about cookies, and exactly why size, not the clock, is the variable that actually generalises.

Every number you saw above the reviews came from a recipe's own method text, not from a structured field we fitted the way we fitted sugar or butter. We never built "bake time" or "oven temperature" into an axis, so we have nothing to average into a universal figure, and averaging recipes that disagree by 25 degrees would only manufacture a false confidence, not remove it.

Size is physics, not a fitted lever

We can state that mechanism with confidence because it is basic geometry, but it never became one of the two measured levers above. Nobody in our reviews ran the experiment of changing only the dough-ball size and telling us what happened.

Oven calibration, tray colour, whether you baked one sheet or two at once, all of these move how a cookie's edge and centre set, and none of them are in our data. The visual cues above generalise across all of that. A minute count does not.
