The mechanism nobody names

What “dried out” actually is

Two different failures hide under one complaint, and they call for two different fixes.

Starch retrogradation

Starch retrogradation on cooling is thermoreversible, which is the entire basis for 'add milk when reheating' -- reheating dry leaves the sauce fighting retrogradation with no water to give back, reading stiffer and pastier.

Casein clumping, tripped by the reheat itself

A microwave heats unevenly through standing-wave interference, creating hot and cold spots where water-rich regions heat faster than fat-rich ones -- some pockets can cross the casein break threshold while others stay cold.

These aren't the same failure under two names. The first is a starch problem: the network that thickened the sauce recrystallizes as it cools and pushes water back out, which is why day-two mac and cheese reads tighter and pastier before you've done anything to it. The second is the casein problem the grainy-sauce page covers in full, just tripped by an uneven microwave instead of an aggressive stovetop. Same clump, different trigger. Worth knowing which one you're fighting before you reach for the milk carton.

Set in the pot, not fixed at the stove

“Add a splash of milk” is really a ratio

The splash works because it hands the starch back some of the water it needed. How much it needed was decided the night before, by how the recipe was built.

More thickener → smoother: recipes with more thickener read more sauce-stable to begin with, measured across 235 reviews. More milk or cream → reheats worse: recipes built with a higher share of milk or cream in the base formula measure worse on reheating, not better, across 97 reviews. Split the 117 recipes we hold into thirds by how much dairy they call for and the same pattern shows up in our own scores: the milkiest third reads measurably worse on reheat than the least milky third.

Those are two separate effects, not one combined ratio our model computes, so we won't hand you a number that implies it does. What both agree on is the shape of the fix: a sauce thin on thickener and heavy on milk is the one most likely to need rescuing later, and the real fix is upstream, in how much starch goes in relative to liquid, not in what you stir back in after the fact. A third mechanism, oven-only

Why it's already dry coming out of the oven

52 of the 117 recipes we hold finish in the oven, and this version of the failure happens before the leftovers even exist.

Bake a mac-and-cheese sauce looser (higher liquid) than you'd want it at the table, because pasta keeps absorbing liquid in the oven -- a sauce correctly saucy at assembly reads tighter and drier after 25-30 minutes uncovered.

That's a different clock than retrogradation: liquid leaving the dish while it's still in the oven, not water leaving it after it's cooled. If your baked version is dry the day you make it, this is the likelier cause. If it was fine at dinner and dry by lunch the next day, that's retrogradation, above.

How to actually reheat it

Low and slow beats full blast on any appliance, because the failure above is heat spikes, not heat itself.

When reheating leftovers, use reduced microwave power instead of full power, or stir in a splash of milk or cream, to restore creaminess.

The closest thing to an actual number in our own reviews: “Add 1-2 tablespoons of milk per cup of leftover mac and cheese before reheating, and stir as it warms so the liquid gets absorbed.” That's specific, and it's also the least agreed-on advice on this page: 10 cooks pushed back against it, against only 3 who said it worked. Treat it as a starting point to adjust from, not a rule.

Cooks split almost exactly down the middle on stirring milk in right before reheating, 10 for it against 10 against, over whether landing warm again is good enough or you want it properly hot.

No fitted lever for what you add back at the stove

The 97-review effect above is about the dairy already in the recipe before it's ever cooked, not about milk stirred in the next day. We do not have a fitted number for the second one, and we're not going to invent one.

The one number the corpus tried is more disputed than agreed

10 cooks pushed back on the tablespoons-per-cup figure against 3 who backed it. We show it because it's the only concrete figure in our reviews, not because it's settled.

Freezing rests on 4 recipes

Too few to fit a score against. The freezing advice above is what cooks reported doing, not a measured outcome.
