How do I make chili hotter or milder?

Turn the amount, not the variety. Across 88 ratings, the chile you choose moves the heat far less than how much of it you use.

We compared 171 published chili recipes and read 2,859 reviews. Heat is the best-evidenced question in this dish and the only one where the crowd agrees in both directions at once: 18 cooks made it hotter on purpose and 15 made it milder, and not one of the 33 reported the change failing.

It is a dial, and it turns both ways

Which is worth saying plainly, because most advice on this question is really advice about shopping.

Best-evidenced claim in the dish 33 cooks, no dissent

More chile makes it hotter. Less makes it milder. Reliably.

Adding more cayenne, dried chili peppers, chipotles, ancho powder, extra jalapeno, or a splash more hot sauce reliably pushes the chili's heat level up and is well received.

Reducing or omitting the jalapeno, cayenne, or chili powder -- or using milder chili beans instead of kidney beans -- tames the heat for those who don't want spice, without hurting satisfaction.

What to do: add in small increments and taste as you go — two cooks specifically report holding the jalapenos back until a mid-cook taste and then adjusting, and landing where they wanted. Heat is one of the few things in cooking you can genuinely titrate.

The asymmetry worth knowing 3 cooks

Halving the chili powder does not halve the heat

Cutting the chili powder amount (to about half, or to 1-1.5 tbsp from a larger original amount) still left heat level at a moderate-to-high 5-7/10, suggesting chili powder alone is not the dominant heat driver in these recipes.

Cooks who cut the chili powder to about half, or down to 1–1.5 tbsp from a larger amount, still ended up with a moderate-to-high result. The base recipe is usually carrying more chile than its stated heat implies, so you have more room to under-dose than the numbers suggest. Going the other way has no such cushion.

What to do: if you are cooking for people with different tolerances, start well under and correct upward. The recovery from too mild is a spoonful; the recovery from too hot is another pot of tomatoes and beans.

What the crowd will not support

Which chile you use matters much less than the pages suggest

Six separate reports, and they keep landing in the same band.

Almost every competing page is organised around variety: a Scoville chart, ancho for smoky, chipotle for smoky-hot. Our reviewers swapped varieties constantly and mostly reported the same heat afterwards. That is not an argument that chiles taste alike — it is a finding about which lever is actually doing the work.

  • Swapping the specified pepper for chipotles in adobo, ancho powder, or Serrano slices instead of jalapeno/cayenne still lands a satisfying heat level.

  • Adding extra cayenne pepper (a second dose beyond the original amount, sometimes stacked with added fresh jalapeño) raises the chili's heat level, reported between 4/10 and 7/10 across four batches.

The two real exceptions. Habanero is a different register and does push the heat up on its own. And Tabasco behaves inconsistently — swapping or omitting it changed less than cooks expected, which suggests it was never carrying much of the load in a pot that already has chile powder, jalapeno and cayenne in it.

One report is worth sitting with: a cook who added sliced serrano, a pepper generally rated hotter than jalapeno, got a surprisingly low result. Dose, ripeness, seed handling and how much of the pod actually went in all swamp the variety on the label.

Heat clusters. The middle half of everyone who cooked these recipes landed between 4.0 and 7.0 out of 10 — a narrow, well-controlled band. Sauce body does not cluster at all: its median is 7.0 but its bottom quarter sits at 2.0, which is two separate populations rather than one spread.

Read together: the thing every article about chili spends its length on is the thing cooks have already got under control. The thing that actually goes wrong — a thin, watery pot — gets a sentence at the end about simmering longer. We wrote that page instead.

This is the argument for spending your attention elsewhere. Heat is a solved problem — the crowd lands where it means to, and the spread is narrow. Sauce body, scored from the same reviews, runs nearly the length of the scale. That is why our longest chili page is the one about a thin pot.

What this page cannot tell you

  • Nothing here says chiles taste alike. They do not. The claim is narrower and it is about the instrument: our reviewers reliably report how hot a chili was and rarely describe what the chile tasted like, so we can measure pungency and cannot measure character.
  • We cannot tell you whether toasting whole dried chiles is worth it. The mechanism is sound — toasting and rehydrating retains volatile compounds that pre-ground powder has lost to the jar — and exactly one cook in 88 ratings reports doing it. That is a real gap, and it would take a controlled pair at matched capsaicin dose to close.
  • Heat tolerance is personal and unblinded. Every score here is one person rating their own cooking against their own threshold. The direction of every change is trustworthy; the absolute numbers are a crowd average of a subjective scale.
  • Nothing here covers capsaicin and fat. Chile compounds are fat-soluble, so the same dose in a fattier pot may read differently. Our corpus cannot separate that from dose, and we do not pretend otherwise.
