Overnight refrigeration of enriched dough (bulk dough or shaped rolls) is a reliable make-ahead technique for soft, well-risen results, but the cold dough needs real time out of the fridge (1.5-2+ hours) to finish rising before baking; pull it too soon and rolls come out dense, underbaked, or barely risen and then burn before the centers finish.

Keeping the dough on the wetter, stickier side - adding extra water for thirsty bread flour, or resisting the urge to add flour to a sticky dough - tracks with fluffier, softer rolls, though it isn't a hard rule: some bakers who added flour back into an overly liquid dough got equally fluffy results.
