Why is my lasagna watery?
Water comes in with the sauce, the ricotta, the vegetables and the noodles. It leaves one way only — by evaporating, which means with the foil off. Every fix that works does one of those two things.

Where the water in a lasagna comes from, and where it goes
Four things put water into a lasagna: the sauce, the ricotta, any vegetables you layer in, and the noodles if they go in dry and take it from everything else.
One thing takes water out: evaporation. That is the whole list. And evaporation only happens where steam can leave — which means with the foil off. Under foil, every drop you put in is still in the dish when you cut it.
So there are exactly two honest ways to a lasagna that is not soupy. Put less water in, or give more of it a way out. That is why the fixes below are ranked the way they are, and it is why a tip that does neither will not help you.
Puts water in
- Vegetables. The big one, and it is not close. Zucchini, spinach, mushrooms and aubergine are mostly water and release it under heat.
- Ricotta. Wet from the tub, and wetter still if it is a cheaper brand.
- The sauce, obviously — though less than you would think (see below).
- Dry noodles, which take their water from the sauce and give it back if there is more than they need.
Takes water out
- Baking with the foil off. The only mechanism there is.
- Baking longer, for the same reason — more time uncovered is more evaporation.
- Drying the vegetables before they go in, which is really putting less in rather than taking more out, and is the most-supported instruction in this dish.
Lasagnas with nothing binding them come out wetter
This is the one part of the page that is measured rather than reasoned. Reviewers scoring a lasagna with nothing binding it averaged 5.0 out of 10 for wateriness across 11 reports, against 3.1 for ricotta set with egg across 13. An egg in the ricotta is not only about holding a slice together — it is holding water too.

The three that carry the most evidence
Drying watery vegetables before they go in — salting and sweating zucchini, squeezing thawed spinach, blotting eggplant, or pre-baking, sautéing or broiling mushrooms — is the most-reported defence against a watery lasagna and it works for almost everyone. It is not foolproof: one cook blotted eggplant with most of a roll of paper towels and still finished watery, because dense vegetables hold more than blotting can take out.

Baking uncovered, or pulling the foil off partway through instead of leaving it on the whole time, lets steam escape and leaves the finished dish noticeably less watery.

Using noticeably more sauce or liquid than the recipe calls for — extra jars, added water, or topping up with jarred sauce when you run short — doesn't automatically make it watery; a long or slow bake gives it time to reduce.

More sauce is not what makes it watery
This is the one that catches people out, and it follows straight from the mechanism. Three cooks used noticeably more sauce than the recipe asked for — extra jars, added water, topping up when they ran short — and did not end up with a pool on the plate, because they gave it a long enough bake for the extra water to leave.
Meanwhile cooks who cut the sauce right back kept it from turning watery, but one who skipped the added water entirely ran a little dry instead.
So sauce quantity is a weaker lever than it feels like, and the foil is a stronger one. If you like a saucy lasagna, you do not have to give that up — you have to give it time uncovered.
What we cannot tell you
- We cannot see your pan. Depth and material decide how fast water leaves — a glass dish and a deep metal pan are different machines — and almost nobody writes down which they used.
- Nobody weighs their ricotta or their vegetables. The water budget is a real mechanism and we cannot put numbers on the inflow, only on what cooks reported coming out.
